Banana ice cream. Who ever thought this up is a genius. Seriously. If you haven’t tried this yet, do it! It tastes like ice cream, but all you use is frozen bananas! Plus this is the perfect snack for really hot days like it has been.
Aug 29th: This summer has absolutely flown by! I recently started a new job and have been working every day (literally, except one day in June and one day in July) since May. It’s been unbelievably exhausting, but it feels so good to be working again. The mornings are also earlier (my first alarm goes off at 3:30am!), so I’m going to bed much earlier as well.
I’m still hoping for a few warm days where I can go to the beach (my legs are still snow white!) and
go swimming finally I went swimming! (Not at the beach, in a hotel.. but still!)
SO! Banana ice cream.
I’ve tried this quite a few times and the best way for me is to put the bananas in the microwave or let them thaw enough to peel them and it also helps to make blending easier. Because of this, the result does end up a bit like “soft serve”, so I’ll put back in the freezer for 30-60 minutes or until it hardens. Once it comes out, it tastes (and looks) exactly like store-bought ice cream.
Banana Ice Cream
· frozen bananas (2 per person)
1. Peel and chop bananas into small pieces.
2. Place into blender and blend until smooth. This will probably take some time and a lot of stirring.
3. That’s it! Place in freezer if needed. (If you forget about it and it freezes completely, just wait a bit for it to thaw and it will taste just as good.)
You can blend anything else you want too. I mixed peanut butter and almond butter.. soo good!!
