When reminiscing childhood foods, Alphagetti and Pizza Pockets are the first to come to mind. A close second being Bagel Bites (but they were smaller and harder to cook and quite frankly didn’t taste as good as Pizza Pockets). Now, since I can’t eat either, making a homemade version was the way to go.
Having the wonderful boyfriend that I do (who will eat just about anything I throw in front of him), welcomed the idea of homemade bagel bites wholeheartedly. Plus I had already cooked them, so he had the advantage of smelling and seeing the finished product.
Basically this idea came to light when realizing we had bagels and tomato sauce and not a whole lot else.
They’re really easy to make and take about 15 minutes in total.
I cook mine this low because of my oven, it will burn anything too small over this temperature. But you could cook them at a higher temperature to reduce time.
· bagels (1-2 per person)
· tomato sauce
· cheese (soy, dairy)
Cut bagels in half and, if needed, slice of the top curved part of the bagel (to help sit better on pan) and cut halves into bite-sized pieces.
Spoon tomato sauce on top of bagel pieces; placing lettuce on the next layer. Spoon more sauce to help weigh down lettuce and adhere to any other ingredients.
Since they are so small, they only need to be cooked for 8-10 minutes, potentially a little less or more depending on the oven.
